Sorry folks! I haven’t been feeling well this week and I hit publish instead of draft so you have some of my mad hatter notes in the original post. So here goes:
1 bunch of broccoli
3/4 cup cherry tomatoes halved
1 tsp chili flakes
1 tbsp chopped peanuts
1 shallot finely diced
Steam the broccoli for about six minutes until tender. In a small pan heat olive oil. Add shallots and peanuts and halved tomatoes stirring occasionally over low heat.
Add the chili flakes and a splash of chicken broth for flavor. Serve immediately.
I served this with coconut shrimp from The Fresh Market.
