Ingredients
- 1 12 oz bag Cal Organic Rainbow Baby Carrots
- 1 shallot peeled and sliced
- 1 tbsp olive oil
- 2 blood oranges
- 1/2 cup water
- 1 tbsp fresh tarragon rinsed, dried and chopped
Instructions
- Peel and slice shallots
- Rinse carrots and dry
- Rinse, dry, stem and mince tarragon
- Zest one orange. Reserve zest. Halve oranges and juice them
- Heat olive oil and cook shallots until golden and tender
- Add carrots and tarragon and let cook for two minutes
- Add water and the juice of both oranges
- Cover and simmer for another 8 to 10 minutes; until tender
