Blood Orange and Tarragon Carrots

This side goes with everything and is done in 15 minutes


1 bag of baby rainbow carrots

2 blood oranges

1 tbsp olive oil

1/2 cup of water

1 tbsp chopped fresh tarragon

1 shallot


Heat olive oil and cook shallots until golden and tender. Add carrots and tarragon and let cook for two minutes. Add water and the juice of both oranges.

Cover and simmer for another 8 to 10 minutes; until tender
