Blood Orange and Tarragon Carrots

Ingredients

  • 1 12 oz bag Cal Organic Rainbow Baby Carrots
  • 1 shallot peeled and sliced
  • 1 tbsp olive oil
  • 2 blood oranges
  • 1/2 cup water
  • 1 tbsp fresh tarragon rinsed, dried and chopped

Instructions

  • Peel and slice shallots
  • Rinse carrots and dry
  • Rinse, dry, stem and mince tarragon
  • Zest one orange. Reserve zest. Halve oranges and juice them
  • Heat olive oil and cook shallots until golden and tender
  • Add carrots and tarragon and let cook for two minutes
  • Add water and the juice of both oranges
  • Cover and simmer for another 8 to 10 minutes; until tender
