We missed our traditional Saint Patrick’s Day dinner (I know! Sacrilege darling). We had a good reason….
Our new granddaughter arrived smack dab in the middle of the day. So in lieu of my kick ass corned beef dinner (will post next year), I made corned beef hash.
I hope you enjoy it. Stay healthy. Stay positive. Check on your loved ones and neighbors and accept the love and light wherever you can get it.
