    • 1 small bowl
    • 1 large bowl with lid
    • 9 inch French skillet

    Ingredients

    • 2 seedless cucumber I used large English seedless cucumbers
    • 1 lime
    • 2 tbsp fresh mint finely chopped
    • 1 tbsp olive oil extra virgin
    • 1 tbsp maple syrup
    • 1/2 tsp black truffle oil
    • 1 tsp crushed red pepper flakes
    • 2 scallions chopped
    • 1 tsbp rice vinegar
    • 1/2 jalepeno finely chopped
    • 1 clove garlic finely minced
    • 1 tbsp sesame seeds
    • 1/4 cup unsalted peanuts chopped
    • 1 tbsp sesame oil
    • 1 tsp coarse sea salt

    Smash the cucumbers in a Ziploc bag with a rolling pin. Rotate the cucumber to make sure it gets smashed evenly. Chop into bite sized pieces

    In a small bowl add olive oil and maple syrup

    Chop mint and add to olive oil

    Roll lime on the counter a few times to loosen it up. Cut in half and squeeze the juice into the bowl with the olive oil

    Add the rice vinegar and the crushed red pepper

    Dice the Jalapeño, reserving the other half for another recipe. Or if you prefer use the entire Jalapeño.

    Add the Jalapeño to the cucumbers

    Slice the green onion

    Whisk the dressing and add to the salad. Cover the bowl with a lid and toss to coat the cucumbers.

    Before serving, heat sesame oil in skillet

    Add garlic, sesame seeds and peanuts and cook on high heat for 5 minutes
