Place in air fryer and set to roast, 400° for 20 minutes. Spritz with olive oil. Shake basket halfway through to cook evenly. Spritz again with olive oil if needed
In a small pot, add stout, maple syrup (see notes for info), and butter
Remove thyme leaves from sprig and add to maple syrup mixture
Cook over low heat until bubbly
Remove from heat and add parsnips and carrots. Toss to coat. Salt and pepper to taste if desired.
