Method
In a small bowl, beat together eggs, milk, thyme, tarragon, salt and pepper
8 eggs, 2 tsp dried thyme, 1 tsp dried tarragon, 1 tsp salt, 1/2 tsp freshly ground black pepper, splash milk
Preheat oven to 400°
Chop ham
Heat pan over high heat
Melt butter and add ham. Sauté for 1 minute until edges start to curl
3 tbsp unsalted butter, 4 oz Serrano Ham
Add egg mixture and set in hot pan for one minute or so. You will start to see the edges come away from the pan.
Break up pieces of the cheese and scatter around the pan
3 oz Boursin Shallot and Chive cheese
Pop into preheated oven and let bake for 15 minutes
Carefully remove from oven and let sit for five minutes before serviing
