Method
Slice pancetta and sear in a pan or griddle until nicely browned. Drain on a paper towel until ready to assemble the burger
Cut bagels in half and brush with olive oil and place in the pan to brown
In a small bowl, mix mayonnaise and goat cheese until thoroughly blended
Once toasted, spread a tablespoon each of the goat cheese mixture and the fig preserves onto each half
Season the turkey burgers lightly with seasoned salt and cook thoroughly for about 15 minutes on high heat until it registers 165 degrees
Place the burger on the bagel bottom and top with pancetta and the other half of the bagel
