I went to the store for corned beef and instead came out with turkey burgers…
And pancetta and goat cheese and came up with this delicious dinner.

Ingredients
- 4 turkey burgers
- 4 everything bagels
- 2 tbsp goat cheese
- 4 tbsp Italian Harvest caramelized fig preserves
- 2 tbsp mayonnaise
- 4 slices pancetta
- 1 tsp olive oil
Instructions
- Slice pancetta and sear in a pan or griddle until nicely browned. Drain on a paper towel until ready to assemble the burger
- Cut bagels in half and brush with olive oil and place in the pan to brown
- In a small bowl, mix mayonnaise and goat cheese until thoroughly blended
- Once toasted, spread a tablespoon each of the goat cheese mixture and the fig preserves onto each half
- Season the turkey burgers lightly with seasoned salt and cook thoroughly for about 15 minutes on high heat until it registers 165 degrees
- Place the burger on the bagel bottom and top with pancetta and the other half of the bagel
