Chewy Coconut Oatmeal Cookies

Ingredients

  • 2 eggs large and at room temperature
  • 1 cup unsalted butter softened
  • 1 1/2 cups quick cook oats
  • 1/2 cup walnuts chopped
  • 1 cup sugar
  • 1 cup light brown sugar packed
  • 3/4 cup coconut shredded
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 cups all purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder

Instructions

  • In a large bowl, cream together the butter, brown sugar and sugar until fluffy
  • Add the eggs, one at a time, mixing well into the butter mixture
  • In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt
  • Add slowly to the cookie mixture
  • Using the same medium bowl, mix together the oats, coconut and walnuts. Add to the mixture and stir in thoroughly
  • You may need to work the mixture with your hands as if kneading dough.
  • Line cookie sheets with parchment paper and grease thoroughly to prevent sticking
  • Preheat oven to 375°
  • Roll mixture into balls about an inch to an inch and a half in diameter. Flatten slightly. You should have about 9 cookies per sheet
  • Bake for 12 minutes and let cool for a minute before transferring the cookies to a cooling rack
