Ingredients
- 2 eggs large and at room temperature
- 1 cup unsalted butter softened
- 1 1/2 cups quick cook oats
- 1/2 cup walnuts chopped
- 1 cup sugar
- 1 cup light brown sugar packed
- 3/4 cup coconut shredded
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 cups all purpose flour
- 1/4 tsp salt
- 1 tsp baking powder
Instructions
- In a large bowl, cream together the butter, brown sugar and sugar until fluffy
- Add the eggs, one at a time, mixing well into the butter mixture
- In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt
- Add slowly to the cookie mixture
- Using the same medium bowl, mix together the oats, coconut and walnuts. Add to the mixture and stir in thoroughly
- You may need to work the mixture with your hands as if kneading dough.
- Line cookie sheets with parchment paper and grease thoroughly to prevent sticking
- Preheat oven to 375°
- Roll mixture into balls about an inch to an inch and a half in diameter. Flatten slightly. You should have about 9 cookies per sheet
- Bake for 12 minutes and let cool for a minute before transferring the cookies to a cooling rack
