Method
In a large bowl, cream together the butter, brown sugar and sugar until fluffy
Add the eggs, one at a time, mixing well into the butter mixture
In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt
Add slowly to the cookie mixture
Using the same medium bowl, mix together the oats, coconut and walnuts. Add to the mixture and stir in thoroughly
You may need to work the mixture with your hands as if kneading dough.
Line cookie sheets with parchment paper and grease thoroughly to prevent sticking
Preheat oven to 375°
Roll mixture into balls about an inch to an inch and a half in diameter. Flatten slightly. You should have about 9 cookies per sheet
Bake for 12 minutes and let cool for a minute before transferring the cookies to a cooling rack
