Brown Rice and Peas

Ingredients

  • 1 9 oz package frozen peas
  • 1 10 oz pacakge frozen brown rice
  • 1 8 oz package fresh mushrooms
  • 1/2 tsp truffle oil divided
  • 1 clove garlic
  • 2 green onions
  • salt and pepper to taste

Method

  1. Clean mushrooms and slice
  2. Peel garlic and mince
  3. Rinse and slice green onions
  4. Cook peas according to package instructions
  5. Cook brown rice according to instructions
  6. While the peas and rice are cooking, brown mushroom in a pan for five minutes on high heat
  7. Add the garlic and green onions and continue to cook for another two minutes. Add 1/4 teaspoon of truffle oil and season with salt and pepper to taste
  8. Add cooked peas and rice to the pan and combine. Add another 1/4 teaspoon of truffle oil and season with salt and pepper if desired. Stir on medium heat for another minute or two.
  9. Serve immediately
