Method
Preheat oven to 425°
Scrub sweet potatoes
Pierce multiple times, coat in olive oil
Wrap in foil and place on a baking sheet
Bake for 1 hour at 425°. Potatoes are ready when squeezed easily (make sure you use an oven mitt)
Remove baking sheet from the oven and place potatoes on a cutting board
Unwrap foil, leaving potatoes in the foil. Cut in half and score the potatoes
Cut butter into small pieces and dot the potatoes with it
Add maple syrup and sprinkle with smoked paprika, cayenne pepper and onion salt
Top with brown sugar and bake for another 5-10 minutes
