Savory Baked Sweet Potatoes

Savory Baked Sweet Potato

Ingredients

  • 2 sweet potatoes
  • 1 tsbp olive oil
  • 1 tbsp butter
  • 1/2 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • 1 tsp onion salt
  • 1 tbsp maple syrup
  • 1 1/2 tbsp brown sugar

Instructions

  • Preheat oven to 425°
  • Scrub sweet potatoes
  • Pierce multiple times, coat in olive oil
  • Wrap in foil and place on a baking sheet
  • Bake for 1 hour at 425°. Potatoes are ready when squeezed easily (make sure you use an oven mitt)
  • Remove baking sheet from the oven and place potatoes on a cutting board
  • Unwrap foil, leaving potatoes in the foil. Cut in half and score the potatoes
  • Cut butter into small pieces and dot the potatoes with it
  • Add maple syrup and sprinkle with smoked paprika, cayenne pepper and onion salt
  • Top with brown sugar and bake for another 5-10 minutes
