We missed our traditional Saint Patrick’s Day dinner (I know! Sacrilege darling). We had a good reason….
Our new granddaughter arrived smack dab in the middle of the day. So in lieu of my kick ass corned beef dinner (will post next year), I made corned beef hash.

Guinness Corned Beef Hash

Ingredients
- 3 lb corned beef brisket with spice packet
- 3 cups water
- 11.2 oz bottle of Guinness
- 1` tbsp maple syrup
- 1 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 3 tbsp apple cider
- 1 yellow onion cut into thick slices
- 4 red skinned potatoes scrubbed well
- 2 shallots
- 1 1/2 cups broth from crock pot
- 1 1/2 tbsp paprika
- 2 tsp garlic powder
- 1 tbsp dried oregano
- 1 tsp cayenne pepper
- 2 tbsp vegetable oil
Optional
- 4 eggs
Equipment
- 6 quart slow cooker
Method
- Peel and slice onion into thick slices
- Line the bottom of the crock pot with onion slices
- Add spice packet from corned beef
- Place corned beef, fat side up on top of onions
- Add apple cider vinegar, apple cider, water, mustard, Guinness, maple syrup to crock pot
- Cook on low for six hours in slow cooker
- Set corned beef onto a cutting board and let rest.
- Scrub potatoes and cut into bite sized wedges
- Peel and chop shallots
- Heat oil in a heavy pan on high heat. Cook shallots until golden
- Add potatoes to brown
- Add broth, 1/4 cup at a time to keep from burning
- Season potatoes with paprika, garlic powder, oregano and cayenne pepper
- Continue adding broth as needed and cook until potatoes can be pierced easily with the tip of a knife (about 15 minutes)
- Roughly cube corned beef and add to pan, stir to combine
- Add eggs if desired
