Ingredients
- 8 eggs extra large to jumbo
- 4 oz Serrano Ham diced
- 3 oz Boursin Shallot and Chive cheese crumbled
- 2 tsp dried thyme
- 1 tsp dried tarragon
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 3 tbsp unsalted butter
- splash milk

- 1 small bowl
Method
- In a small bowl, beat together eggs, milk, thyme, tarragon, salt and pepper8 eggs, 2 tsp dried thyme, 1 tsp dried tarragon, 1 tsp salt, 1/2 tsp freshly ground black pepper, splash milk
- Preheat oven to 400°
- Chop ham
- Heat pan over high heat
- Melt butter and add ham. Sauté for 1 minute until edges start to curl3 tbsp unsalted butter, 4 oz Serrano Ham
- Add egg mixture and set in hot pan for one minute or so. You will start to see the edges come away from the pan.
- Break up pieces of the cheese and scatter around the pan3 oz Boursin Shallot and Chive cheese
- Pop into preheated oven and let bake for 15 minutes
- Carefully remove from oven and let sit for five minutes before serviing
