Miso Mayonnaise Roasted Cauliflower

Creamy mayonnaise and salty-sweet miso deepen the nutty depth of the cauliflower.  I had made roasted potatoes and chicken to go with this, but wound up eating this only for dinner.  It was that good.

Ingredients

  • 1 head cauliflower cut into florets
  • salt to taste
  • pepper to taste
  • garlic powder to taste
  • 1 tbsp olive oil
  • 2 tbsp mayonnaise
  • 1 tbsp dark miso paste

Method

  1. Preheat oven to 400°
  2. Remove stem from head of cauliflower and cut into bite sized florets
    1 head cauliflower
  3. Toss in a bowl with olive oil and season to taste with garlic powder, salt and pepper
    salt, pepper, garlic powder, 1 tbsp olive oil
  4. In a small bowl, mix mayonnaise and miso paste
    2 tbsp mayonnaise, 1 tbsp dark miso paste
  5. Add to large bowl and toss to coat
  6. Spread out cauliflower on a baking sheet
  7. Roast for 45 minutes
