Air Fryer Roasted Parsnips and Carrots in a Guinness Maple Glaze

This easy and mostly hands off dish will win over even your pickiest eaters.  Nutty parsnips and sweet carrots are roasted to perfection in the air fryer.  The glaze can be made in five minutes.  Quick to the table and sure to please.

Ingredients

Equipment

  • 1 Air Fryer
  • 1 small saucepan

Method

  1. Peel and cut carrots and parsnips
  2. Place in air fryer and set to roast, 400° for 20 minutes. Spritz with olive oil. Shake basket halfway through to cook evenly. Spritz again with olive oil if needed
  3. In a small pot, add stout, maple syrup (see notes for info), and butter
  4. Remove thyme leaves from sprig and add to maple syrup mixture
  5. Cook over low heat until bubbly
  6. Remove from heat and add parsnips and carrots. Toss to coat. Salt and pepper to taste if desired.
  7. Serve immediately
