Active time: 15 minutes
Total time: 55 minutes including ten minute cooling time
- 1 package of low fat kielbasa – cut into 1 inch slices
- 1 bunch of mustard greens -washed/dried
- 3 slices of rye bread
- 4 oz of grated havarti
- 1 tsp honey mustard
- 10 eggs
- 1/2 tsp dried thyme
- 1/8 tsp of garlic powder
- 3 tbsp milk
- pinch of salt/pinch of pepper
Heat oven to 350°
Slice kielbasa into 1 inch slices
Wash and dry mustard greens. Remove stems and stack leaves on top of each other. Roll and slice. Cut those slices in half.
Cube rye bread
Sauté kielbasa until nicely browned (about five minutes) and add mustard greens and cook, stirring frequently for another 5-8 minutes
Spray a 9.5 pie dish with cooking spray and line with cubed rye bread
Top rye with kielbasa mixture and then half of the cheese.
Beat eggs with milk, mustard, thyme, garlic powder and salt and pepper. Pour over the top of Best eggs with milk mustard salt pepper thyme and garlic powder and pour over contents of the pie dish. Top with remaining cheese.
Grate 4 oz of cheese
Sprinkle half of the havarti over kielbasa. Top with beaten eggs
Bake for 30 minutes. Remove from oven and let rest for another 10 minutes.
