Ingredients
- 13 oz low fat kielbasa
- 1 1/2 cups mustard greens washed, dried and stemmed. Torn into pieces
- 3 slices rye bread
- 4 oz havarti grated
- 1 tsp honey mustard
- 10 eggs
- 1/2 tsp dried thyme
- 1/8 tsp garlic powder
- 3 tbsp milk
- 1 pinch salt
- 1 pinch pepper
Instructions
- Preheat oven to 350°
- Wash and dry mustard greens. Remove stems and stack leaves on top of each other. Roll and slice. Cut those slices in half. Set aside
- Cube rye bread. Set aside
- Slice kielbasa into 1 inch slices
- Sauté kielbasa until nicely browned (about five minutes)
- Add mustard greens and cook, stirring frequently for another 5-8 minutes
- Grease a 9.5 pie dish with cooking spray and line with cubed rye bread
- Top rye with kielbasa mixture and then half of the cheese
- Beat eggs with milk, mustard, thyme, garlic powder and salt and pepper. Pour over the top of contents of the pie dish
- Top with remaining cheese
- Bake for 30 minutes
- Remove from oven and let set for 10 minutes, then serve
