Chilled Green Beans with Tarragon Mustard Vinaigrette

Ingredients
- 1 hard boiled egg
- 1 - 16 oz package fresh haricot verts
- 1 tbsp Extra Virgin Olive Oil Seven Barrels Blood Orange
- 1 tbsp rice wine vinegar
- 1 tbsp mustard Edmond Fallot Tarragon Mustard (available through Yummy Bazaar
- 3 cups cold water
- 1 cup ice
Equipment
- 1 small bowl
Method
- Blanche green beans by dropping in boiling water for 3-4 minutes
- With tongs, place green beans in an ice bath
- Whisk olive oil, mustard and vinegar together
- Once beans are fully cooled, mix in vinaigrette and chill
- When serving, top with chopped egg
