Ingredients

  • 1 hard boiled egg
  • 1 - 16 oz package fresh haricot verts
  • 1 tbsp Extra Virgin Olive Oil Seven Barrels Blood Orange
  • 1 tbsp rice wine vinegar
  • 1 tbsp mustard Edmond Fallot Tarragon Mustard (available through Yummy Bazaar
  • 3 cups cold water
  • 1 cup ice

Equipment

Method

  1. Blanche green beans by dropping in boiling water for 3-4 minutes
  2. With tongs, place green beans in an ice bath
  3. Whisk olive oil, mustard and vinegar together
  4. Once beans are fully cooled, mix in vinaigrette and chill
  5. When serving, top with chopped egg
