Brown Rice and Peas

Ingredients
- 1 9 oz package frozen peas
- 1 10 oz pacakge frozen brown rice
- 1 8 oz package fresh mushrooms
- 1/2 tsp truffle oil divided
- 1 clove garlic
- 2 green onions
- salt and pepper to taste

Method
- Clean mushrooms and slice
- Peel garlic and mince
- Rinse and slice green onions
- Cook peas according to package instructions
- Cook brown rice according to instructions
- While the peas and rice are cooking, brown mushroom in a pan for five minutes on high heat
- Add the garlic and green onions and continue to cook for another two minutes. Add 1/4 teaspoon of truffle oil and season with salt and pepper to taste
- Add cooked peas and rice to the pan and combine. Add another 1/4 teaspoon of truffle oil and season with salt and pepper if desired. Stir on medium heat for another minute or two.
- Serve immediately
