This potato has become my new obsession.
Serve with grilled steak or chicken or pork tenderloin.
Truffled Buttery Grilled Red Skin Potatoes

Ingredients
- 1 tsp unsalted butter
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1 sprig fresh tarragon
- garlic powder to taste
- seasoned salt to taste
- 1 tsp truffle oil
Method
- Preheat grill
- Scrub potatoes and dry
- Slice in half lengthwise
- Lay cut side down and cut slits down the length of the potato
- Place potato on aluminum foil and season to taste with season salt and garlic powder
- Cut teaspoon of butter in half and put one half on each potato half
- Top with herb sprigs
- Fold aluminum foil up around potato to create a packet
- Place packets flat side down on grill and cook for 25-30 minutes
- Carefully peel away foil from bottom which should be a crispy brown and drizzle truffle oil over top
